Laugen-Knödel in the TM6

I love Knödel, and these laugen Knödel in the TM6 are very easy to make.

I just don’t like throwing food away. And you can do so much with bread, even if it’s a little stale. Knödel are just one option; there are countless other ways to turn stale bread into new dishes.

Ingredients

  • 20 g Butter

  • 1 Onion

  • 150 ml Milk

  • 250 g stale Pretzel Rolls or Pretzels

  • ½ tsp Salt

  • ¼ tsp Pepper

  • ¼ tsp Paprika

  • ¼ tsp Nutmeg

  • 2 Eggs

  • 1 Bunch Chives, chopped

Instructions

Step 1

Slice the stale pretzel rolls or pretzels and place them in the TM6 bowl. Chop for 10 sec/speed 6 and transfer to a bowl.

Step 2

Quarter the onion and chop in the TM6 for 10 sec/speed 6, then use the spatula to push the mixture down.

Add the butter and sauté for 2 min/120°C/speed 1.

Step 4

Add the chopped rolls, milk, eggs, chives, salt, pepper, paprika, and nutmeg, and knead the dough for 30 sec.

Step 5

The mixture is quite soft, so I shape the dumplings into small balls using two tablespoons. Place them on the greased large Varoma steaming tray.

Step 6

Pour 500 ml of water into the mixing bowl, place the Varoma on top, and cook for 30 minutes/Varoma/speed 1.

Step 7

The dumplings can be served as is or pan-fried.

Notes

Dumplings are best served with sauce, such as Mushrooms or Sausages with Onion sauce.
