Make your own Fruit or Vegetable Caviar, I show you how to do it. These fruit or vegetable pearls are a big hype at the moment.
And they are not that difficult to make! They embellish starters, salads, desserts and much more. You can add a lot of colour with certain vegetable or fruit juices, and it looks really great. You don’t need to be a cooking pro to make them and most importantly, you don’t need any fancy ingredients. It’s really very simple!

Ingredients
Apple-Beetroot Caviar: (dark red)
250 ml clear Apple Juice
50 ml Beetroot Juice
3 g Agar-Agar Powder
Sunflower oil
200 ml cloudy Apple Juice
100 ml clear Apple Juice
3 g Agar-Agar Powder
Sunflower oil
Apple caviar: (gold)
Instructions

Step 1
Pour the oil into a wide glass halfway up and chill in the freezer for about 30 minutes. Remove 5 minutes before use.

Step 2
Bring the fruit juice and/or vegetable juice to a boil in a saucepan and boil down briefly. Stir in the agar-agar and simmer gently for about 2-3 minutes.

Allow to cool slightly, then pour into a squeeze bottle or syringe. Now use the bottle to squirt drops into the cold oil, which will sink to the bottom. Leave to rest there for a short time.

Then pour through a sieve and rinse briefly and carefully with cold water. Store in a container in the refrigerator until use. The oil can be used again.
