
Sicilian Pesto from the TM6

This Sicilian pesto is quick to make, whether by hand or in the TM6. I made it in the Thermomix because I was in a hurry.
Pestos can be made with all kinds of herbs, nuts and vegetables. I already have a few here on my blog.
For example the classic Basil Pesto or Tomato Pesto. Or the Pili Nut Pesto. How about 3 creative vegetable Pestos?. Even with Carrot green you can make Pesto. Or with Parsley and Lime! Or with Cashew Nuts and dried Tomatoes! Almond-Basil is also one Variation and Tomato and Olives. And also with Capers it is possible!
And now there’s the Sicilian pesto, made from pecorino cheese, almonds and basil! And what is pesto used for? As a dip, as a sauce, as a marinade, as a topping, as a spread and much more!

Ingredients
30 g grated Pecorino Cheese
40 g Almond slivers
8 Garlic cloves
80 g Basil Leaves
200 g Cherry Tomatoes
100 ml Olive Oil
Salt
¼ tsp Chili Flocken
Instructions

Step 1
Put the pecorino, almonds, basil leaves, garlic cloves and cherry tomatoes into the TM6 pan and chop for 10 seconds/speed setting 8, pushing down with the spatula.

Step 2
Add the olive oil, salt and chili and stir for 20 seconds/speed setting 4.

Step 3
Pour into a large jar, pour over the olive oil and seal tightly.
Notes
The pesto can of course also be made in a mortar.
