Thai Basil Eggplant Dish

This Thai basil eggplant dish is very simple and really very good! The Thai basil makes the sauce very spicy and tasty. And because it really is a very simple dish, it is cooked in no time at all!

As I really love eggplants, I’m always looking for recipes that are simple but above all highlight the vegetables. This recipe really highlights the eggplant and is cooked in 20 minutes!

Ingredients

  • 2 Eggplants

  • Olive Oil

  • 3 cloves of Garlic, grated

  • 1 Handful Thai Basil

  • Sauce

  • 1 ½ tbsp Chili Garlic Sauce

  • 2 tsp Fish sauce

  • 2 tbsp Soy Sauce

  • 1 tsp Sugar

  • 50 ml Water

  • 1 tsp Cornstarch

Instructions

Step 1

Cut the eggplants into slices, then cut them in half. Fry them all in hot oil. Put to one side.

Step 2

Heat a little oil in the same pan and fry the garlic in it. Then add the Thai basil and fry briefly.

Step 3

Mix the sauce ingredients together and add. As soon as the sauce starts to bubble, add the eggplants and cook.

Step 4

Serve hot with white rice.

Notes
