
Red Snapper with Mushrooms and Prawns

I was at the local market and there were several fish stalls. I couldn’t take my eyes off a red snapper. I had to buy one and my daughter was staring at the big prawns… so. for dinner I cooked red snapper with mushrooms and prawns and chimichurri.
Red snapper is a common fish from our area in Asia and it is very easy to cook. As it doesn’t have many bones, it is very easy to cook whole. The easiest way to avoid fish bones is to cut the cooked fish in the middle of the body with a spoon and then scrape the flesh upwards from the bones and scrape the other half of the cut downwards. This leaves the bones in the fish.
My daughter wanted mixed mushrooms served with it, so I fried them briefly with lots of herbs and a little white wine. And so that the fish didn’t become bland, I served a Chimichurri with it.

Ingredients
1 Red Snapper approx. 25-30 cm long
Salt and Pepper
Olive Oil
Cornstarch
1 Lemon
Butter Flakes
20 g Butter
500 g mixed Mushrooms
½ Bunch Parsley, chopped
3 Garlic cloves, chopped
3 twigs Thyme
50 ml White Wine
Salt and Pepper
Chili Powder
4 large Prawns, unpeeled

Step 1
Wash the fish well, scrape off the scales and remove the innards. The fishmonger usually does this because he knows what to look for.

I made an incision in the skin on both sides and rubbed the fish with salt and pepper, a little cornstarch and olive oil.

Slice the lemon and push it into the belly of the fish, add a few flakes of butter.

Place the fish on a grill plate and roast in the oven for 20 minutes at 190 C degrees. Turn the fish over and roast for another 20 minutes.

Meanwhile, wash the mushrooms and cut some of them into smaller pieces.

Melt the butter in a shallow pan and fry the garlic in it.

Add the mushrooms and fry. Season well! Pour in the white wine and simmer for about 10 minutes.

Serve the fish with the lemons, mushrooms, the prawns and chimichurri, or an Aioli.
