Breaded Asparagus with Salad and Prawns

Breaded asparagus with salad and prawns – a hearty meal packed with vegetables, salad and delicious prawns, quick and easy to make.

It’s asparagus season… unfortunately, it’s a very expensive treat for us. White asparagus often costs 20–40 euros a kilo here in Asia. Green asparagus is quite a bit cheaper. It’s a shame, because we love white asparagus.

This quick and easy dish is made with green asparagus, which is actually better suited to frying than the white variety. Served with a salad and prawns (or ham), it makes for a delicious yet healthy meal!

Ingredients

  • 500 g green Asparagus

  • Pinch of Sugar

  • 20 g Butter

  • 1 Egg, beaten

  • Breadcrumbs

  • mixed Salad Leaves

  • 1 Avocado

  • 1 small can Sweet Corn

  • 100 g small peeled Prawns (you can also use cooked ones)

  • Dressing

Instructions

Step 1

Cut off the ends of the asparagus and peel them slightly. Cut them in half and cook for 10 minutes in salted water with a pinch of sugar, then drain and leave to cool slightly.

Coat the cooked asparagus in egg, then in breadcrumbs, and fry in a little oil until golden brown. Set aside.

If the prawns are still raw, cook them briefly in a little salted water.

Meanwhile, arrange the salad on the plates, add the sweetcorn, place the asparagus on top, and pile the prawns alongside.

Make the dressing, pour it over the salad and serve immediately.
