
Plantain Nachos overload

Nachos are delicious and can be served with all sorts of things. However, I have made Plantain Nachos Overlord, which are completely gluten-free.
You serve them as an appetizer or as a snack with drinks. I serve them with sour cream and Guacamole. . Of course, you can also make a plate like this with Tortilla Chips. However, I love plantains very much and here in the Philippines they are very easy to get. It’s up to you what you put on it, I used guanciale, corn kernels, herbs and tomatoes and put them on the fried plantains.

Ingredients
4-6 Plantains
Oil for frying
1 can Kernel Corn
200 g Bacon or Guanciale chopped
1 Handful Cherry Tomatoes or 2 Tomatoes chopped
1-2 green Chilis, chopped
Salt and Pepper
30 ml White Wine
some chopped Parsley or Spring onion
grated Cheese to taste
Instructions

Step 1
Peel and thinly slice the bananas, then deep-fry in hot oil until they are like chips. Drain on kitchen paper.

Meanwhile, fry the bacon, then add the tomatoes, chili and corn kernels.

Season with salt and pepper and deglaze with white wine. Allow the liquid to be reduced completely.

Step 4
Place the banana chips in a wide dish and top with the cooked topping. Sprinkle with parsley or spring onions, add grated cheese on top (I added a little, as it doesn’t go so well with bananas). Then add dollops of sour cream and guacamole and serve.
