Mast o Khiar – Persian cucumber salad is well worth trying. It is wonderfully refreshing and really a different kind of salad.
The Persians know how to spice up salad! They like to do this with herbs, nuts and dried berries. The dressing is very simple, yogurt is the main ingredient!
I really love Persian cuisine! As I have Persian relatives through my sister, I am often spoiled with delicious dishes! And as I am quite familiar with Indian and Pakistani cuisine, I often see parallels, as these countries were linked to trade much earlier.

Ingredients
2-3 garden cucumbers (the short, thick ones)
150 g Nature Yoghurt
1 Handful Walnuts
1 Handful Raisins
2 tbsp fresh Mint
2 Garlic cloves, grated
Salt and Pepper
Salad Leaves
Instructions

Step 1
Peel and dice the cucumber. Drain in a sieve.

Mix the yogurt with the garlic, add the spices.

Mix the cucumber with the yogurt, add the chopped nuts and raisins, chop the mint and mix in.

Leave to infuse in the fridge for 1 hour. This salad can be prepared in advance and left to rest in the fridge.

Spread the green salad leaves on a plate and place the salad on top. Garnish with some chopped nuts, raisins and fresh mint and serve.
