Potato Patties with Leek

I love to make potato cakes from mashed potato leftovers. This time I didn’t have mashed potato leftovers, but just boiled potatoes. As I didn’t have a passe-vite I had to mash them with the fork. The dough did not turn out as smooth as usual, but who cares. As long as the cakes are tasty. I filled these with leek, and they were delicious!

Ingredients
300 g leftovers of mashed Potatoes or boiled Potatoes mashed
2 Eggs
1 Spring-onion, chopped
Salt and Pepper
Paprika
Rosemary
Nutmeg
approx. 5-6 heaped tbsp Flour
1 Leek, halved lengthwise and chopped
Sunflower Oil for frying

Step 1
Mix all ingredients to a sticky dough.

Step 2
Heat some oil in a wide pan and fry batches of the dough in the hot oil. Turn them over when they are browned and brown them on the other side too.

Serve hot, sprinkled with sea-salt.
