Spanish Sardines on Tomato Sauce

Spanish sardines in tomato sauce are quick to make and very typical of Spain. I used canned sardines because I found some Spanish ones that were very spicy.

The sauce goes well with both sardines and albondigas, Spanish meatballs. These tapas are a simple meal that can be made quickly if you have sardines at home. You can also spread the tomato sauce on toasted bread and place a sardine on top, serving it like a crostini.

Ingredients

  • 2 cans of spicy Spanish sardines

  • 3 tbsp Olive Oil

  • 1 Onion

  • 3 Garlic cloves

  • 5 Tomatoes

  • ½ tsp Paprika

  • Salt and Pepper

  • 1 Pinch of Sugar

  • fresh Parsley

Instructions

Step 1

Coarsely chop the onion and garlic. Heat the oil in a frying pan and add these ingredients.

After about 5 minutes, when the onion is translucent, add the spices. Add the tomato pieces and mix well. Cook for about 5 minutes until the tomatoes break down. Allow the mixture to cool slightly.

Once the mixture is no longer hot, purée it in a blender. Then spread it on a plate.

Step 4

Remove the sardines from the can and place them on the tomato sauce, sprinkle with a little parsley if desired, and serve.
