Two kinds of Satay Skewers

Two kinds of satay skewers: one with the classic satay sauce and a lemongrass marinade, and the other with a peanut marinade. Both versions are absolutely delicious.

Soon it’ll be time to barbecue again — spring is here, and over Easter we might even have the perfect weather for it. These skewers will be just the thing!

I love simple grilled skewers like these; ; there are several on my blog, such as the traditional Chicken and Beef Satay Skewers, the BBQ Shrimps, Chicken Skewers with Lemon Marinade and mixed BBQ Skewers.

Ingredients

  • 800-1000 g Chicken Breasts, cut into long strips

  • Lemongrass Marinade

  • 1 small Onion, chopped

  • 3 Garlic cloves, chopped

  • 4 Lemongrass stalks (white part only), chopped

  • 3 cm Ginger, chopped

  • 1 tsp Cumin Powder

  • 1 tsp Coriander Powder

  • ½ tsp Turmeric

  • 1 tsp Salt

  • Chili Flakes

  • 1 tbsp brown Sugar

  • approx. 80-100 ml Water

  • Satay Sauce or Marinade:

  • 2 heaped tbsp Peanut Butter

  • 4 tbsp Soy Sauce

  • 1 tbsp Rice Wine Vinegar

  • 1 tsp Chili-Garlic Sauce (as Marinade 1 tbsp!)

  • 1 tsp Sesame Oil

  • 1 tbsp Honey

  • Juice of 2 Lemons

Step 1

See the tip in the notes! Mix the ingredients for the lemongrass marinade together; I pureed them in a blender. Then marinate the meat in it for 2 hours.

Step 2

Mix the sauce ingredients together, and add more chili-garlic sauce to make a marinade. Either marinate the meat in it for 2 hours or chill it in the refrigerator.

Step 3

Thread the chicken pieces onto wooden or metal skewers in alternating layers. Grill well on both sides over a hot grill. Serve with or without sauce.

Notes

There are two options: you can use the peanut sauce as a marinade, or serve it as a sauce with the skewers with the lemongrass marinade.
