
Two kinds of Satay Skewers
Soon it’ll be time to barbecue again — spring is here, and over Easter we might even have the perfect weather for it. These skewers will be just the thing!
I love simple grilled skewers like these; ; there are several on my blog, such as the traditional Chicken and Beef Satay Skewers, the BBQ Shrimps, Chicken Skewers with Lemon Marinade and mixed BBQ Skewers.
Ingredients
800-1000 g Chicken Breasts, cut into long strips
1 small Onion, chopped
3 Garlic cloves, chopped
4 Lemongrass stalks (white part only), chopped
3 cm Ginger, chopped
1 tsp Cumin Powder
1 tsp Coriander Powder
½ tsp Turmeric
1 tsp Salt
Chili Flakes
1 tbsp brown Sugar
approx. 80-100 ml Water
2 heaped tbsp Peanut Butter
4 tbsp Soy Sauce
1 tbsp Rice Wine Vinegar
1 tsp Chili-Garlic Sauce (as Marinade 1 tbsp!)
1 tsp Sesame Oil
1 tbsp Honey
Juice of 2 Lemons
Lemongrass Marinade
Satay Sauce or Marinade:

Notes
There are two options: you can use the peanut sauce as a marinade, or serve it as a sauce with the skewers with the lemongrass marinade.
