
Asian Mango Salad

An Asian mango salad makes a wonderful appetizer or side dish for grilled meat! It’s incredibly refreshing!
It’s mango season in Asia. They’re perfectly ripe right now! That’s why you should use them in all kinds of dishes! I decided to try making a fresh salad, so I looked up some pictures online. There were some beautiful salads there — the colors were just amazing. I really liked them, so I whipped up an Asian mango and vegetable salad.

Ingredients
3 Mangos (not overripe!), thinly sliced
1 Cucumber, julienned
2 big Carrots, julienned
½ yellow Peperoni, thinly sliced
1 scallion, chopped
½ Bunch Parsley, chopped
1 handful Peanuts, crushed
1-2 red Chilis chopped
2 Lime, the Juice
1 Lemon, Zest and Juice
1 tbsp Fish Sauce
2 tsp Sesame Oil
2 tsp brown Sugar
1 clove garlic, grated
Dressing

Step 1
Place the dressing ingredients in a jar and shake well.

Mix all the vegetables with the mango; this works best with your hands.

Pour the dressing over the mixture, sprinkle with the crushed peanuts, and serve.
