Roasted Carrots with Yogurt Dressing

I love roasted carrots! And these roasted carrots with yogurt dressing are really delicious and very easy to make.

What could be simpler than roasting the carrots in the oven and quickly whipping up the topping of yogurt, lemon, and honey, then finishing it off with roasted pine nuts? Simply delicious! This dish can be served cold or warm. Serve it with grilled meats or a roast that can cook on its own in the oven. This makes cooking for guests quick and easy.

Ingredients

  • 500 g young Carrots

  • Olive Oil

  • Salt

  • Yogurt Dressing:

  • 300 g Greek Yogurt

  • Juice of 1 Lemon

  • Thai Basil, chopped (or Mint)

  • 1 tbsp Honey

  • Chili

  • Paprika

  • Salt and Pepper

  • Topping

  • 20 g Butter

  • 1 Handful Pine Nuts

  • Honey

Instructions

Step 1

Scrape the carrots with a knife, then place them on a baking sheet. Drizzle with olive oil, sprinkle with salt, and roast in the oven at 180°C for 30 minutes.

Meanwhile, melt the butter in a shallow pan and toast the pine nuts in it.

Mix the yogurt with the lemon juice, add honey and herbs, and season well.

Step 4

Place the roasted carrots on a plate, spread the dressing over them, and top with the pine nuts. Drizzle a little more honey over the top and sprinkle with some chopped herbs.
