
Small mashed Potato Soufflés

If you have leftover mashed potatoes, what do you do with them? There are various solutions, such as small mashed potato soufflés, or potato patties, croquettes, Waffles, and much more.
These small soufflé-like potato cakes are very easy to make and taste very good. They are ideal for beautifully presented dishes, with meat and vegetables or even fish. You can make them in small muffin tins or, like me, in small dessert tins and soufflé molds. You have to grease them very well, then the mashed potato soufflés just slip out.

Ingredients
400 g mashed Potatoes
3 Eggs
180 g Gruyère Cheese grated (or others)
Salt and Pepper
Chili
Paprika
Rosemary
20 g Gruyère Cheese grated
Herbs to taste
Instructions

Step 1
Mix the mashed potato well with all the other ingredients except the 20 g Gruyère.

Step 2
Grease the ramekins well and pour in the filling. Tap briefly on the work surface to prevent air bubbles. Sprinkle with the 20 g Gruyère.

Bake in the oven at 200 C degrees for 20-30 minutes.

Leave to stand for 5 minutes, then turn over and drop out of the tins.
Notes
They taste wonderfully soft and cheesy!
