Crystal Dumplings with Egg and Mushrooms

Cristal Dumplings (水晶饺子 – shuǐjīng jiǎozi or Fun Guo) get their name from the beautiful translucent appearance of the wrappers. My cheater crystal dumplings with egg and mushrooms are made with rice paper to create a chewy skin, similar to those made with a mixture of rice flour and starch in Chinese restaurants and dim sum places!

They are gluten-free, filled with a mixture of mushrooms, carrot and egg and served with a dipping sauce.

Ingredients

  • 12 Rice Paper sheets for Spring Rolls

  • Filling

  • 2 Eggs, lightly beaten

  • 4 Spring onion, chopped

  • 100 g Mushrooms any kind, chopped

  • 1 Carrot, julienned

  • Salt and Pepper

  • Chili

  • 1 tsp Sesame Oil

  • 2 tbsp Oil

Instructions

Step 1

Heat the oil in a wide pan and add the beaten eggs like a crepe, cook until it is not liquid anymore, take from the pan to a plate and chop.

Add to the same pan the mushrooms, carrot, spring onion and season well. Cook until excess water has evaporated. Then add the chopped egg and the sesame oil, mix well and let cool.

Now organize your workplace: Put a wide plate with water to your left. Put the filling to the top of you. Use a flat plate in front of you. Prepare a plate with baking paper to your right.

Soak briefly 1 rice paper and put it onto the plate in front of you. Soak a second one and put it on top of the first one. With a scissor cut it into quarters, you have now 4 rounded triangles with double leaves.

Take one into your palm with the point pointing away from you. Add 1 tsp or more of the filling into the middle, fold up the rounded side, down the point and in both sides. You get a squarish packet.

Put them onto the baking paper but make sure they do NOT touch each other, or they will stick together, never coming apart again!

Heat some oil in a flat pan and fry them well on both sides.

Notes

You can add shredded tofu and any other vegetables, however, see to it, the vegetable is not watery. Serve it with this Dip!
