Fried Fish Croquettes

Delicious fried fish croquettes are not only made quickly, but they also taste good to everyone (sometimes even fish refusers). These croquettes come from Italy, are wonderfully seasoned and can be served as a main dish, appetizer or even finger food. We like them very much!

Ingredients
1 kg Plaice fillets (or any other fish)
2 Eggs
4 slices of Toast Bread, shredded and soaked in a little milk
1 can of Anchovies in oil
30 g soft Butter
½ Bunch Parsley, chopped
2 cloves of Garlic pressed
1 Handful Breadcrumbs
Salt and Pepper
some Flour
Oil for frying
Zest of 1 Lemon
1 small glass of White Wine (dry)

Step 1
Wash the fish and simmer gently in salted water, with the addition of the lemon zest and white wine, for 15 minutes. Drain the fish and chop it. Let it cool down a bit.

Meanwhile, mix well the soaked bread with the eggs, garlic, parsley, salt and pepper. Chop the anchovy fillets and add them.

DAdd the chopped fish and mix everything very well. Add some breadcrumbs to make the mixture firm. (Depending on the fish) Refrigerate the mixture briefly so that it firms up a bit.

Then cut out balls with a cookie cutter and turn them in the flour. Fry the balls in hot oil until brown.
