Lebanese Turmeric Rice from the TM6

There are many varieties of rice, and this Lebanese turmeric rice goes well with a wide range of dishes. Its vibrant color makes it a real eye-catcher on any table!

I cooked the rice in my Thermomix, however you can cook it also in a pan.

Turmeric is a root belonging to the ginger family. Curcumin, the substance traditionally extracted from the plant, acts as a flavoring agent and a yellow coloring, used, amongst other things, to color food. There are around 120 taxonomically recognized species, most of which originate from South and South-East Asia.

Incidentally, turmeric has a beautiful flower that immediately brings to mind orchids.

This recipe is part of Volkermampft’s Culinary World Tour, which is visiting Lebanon this month.

Ingredients

  • 350 g Basmati Rice

  • 2 tbsp Ghee

  • 1 Onion, chopped

  • 2 tsp Turmeric

  • ½ tsp Cumin Powder

  • 500 ml Broth

  • 1 ½ tsp Salt

  • 1 can Chickpeas

  • 2 tbsp roasted Pinenuts

  • 3 Dates, chopped or Raisins

Step 1

Rinse the rice thoroughly until there is no starch left. If the starch remains, the rice will become mushy. Then add a little water to the bowl with the rice (just a little, not right to the top) and leave it to soak for 2 hours; it will absorb the water.

Step 2

Add the onion to the TM6 bowl and chop for 5 seconds/speed 8. Push down with the spatula.

Step 3

Add 2 tbsp ghee and the spices, then sauté for 2 minutes/120°C/speed 1.

Step 4

Mix in the rice, pour in the stock, add the rinsed chickpeas and select the ‘Cook Rice’ function. The rice will cook on its own.

Step 5

Once the rice is cooked, transfer it to a bowl and garnish with pine nuts and dates.
