Black Pasta with Fish and Spinach

Black pasta with fish and spinach, served with Parmesan chips—that was my daughter Andrea’s idea when we took on a challenge a while back. The ingredients were provided by Kerstin from Verboten gut.

The ingredients were black pasta, fish, Parmesan, spinach, and mushrooms. What do you do with these ingredients? Well, Andrea cooked up something really delicious. Her menu: Black pasta with a creamy mushroom-tomato sauce, served with a fish fillet wrapped in spinach and Parmesan heart-shaped chips!

And of course, she wasn’t the only one who cooked—I had to come up with something, too. Here you can see my idea using the same ingredients.

Ingredients

  • 80 g black Noodles

  • 2 Gold Perch fillets (or other firm-fleshed fish)

  • 150 g Mushrooms

  • 1 Tomato

  • 50 ml Cream

  • 30 g Spinach

  • 30 g Parmesan

  • 1 Egg

  • some Butter

  • Salt and Pepper

  • Basil

Instructions

Step 1

First, for the Parmesan chips, place a heart-shaped cookie cutter on a sheet of parchment paper and fill it with grated Parmesan. Carefully lift out the cookie cutter. Bake in the oven at 180 C for about 15–20 minutes, until they are golden brown. Let them cool.

Step 2

Beat the egg with about 10 g of grated Parmesan, salt, and pepper. Lightly grease a sheet of aluminum foil, place a layer of spinach on top, pour some of the egg mixture over it, add another layer of spinach, then another layer of egg mixture, then place the fish on top, season well, and top with another layer of egg mixture, spinach, egg mixture, and spinach. Seal the foil tightly and bake the fish in the oven at 180 C for about 20 minutes.

Meanwhile, cook the pasta al dente according to the package directions.

Chop the mushrooms and tomato into small pieces and sauté them in a little butter; season well with basil, salt, and pepper, then add the cream and let it reduce slightly.

Place the pasta on a plate and pour the sauce over it. Carefully remove the fish from the foil and place it next to the pasta on the plate, garnish with the Parmesan hearts, and serve.

Notes

It was an interesting challenge with ingredients that seemed impossible at first glance.
