Ayam Goreng – Indonesian fried Chicken

Ayam Goreng – Indonesian fried chicken – is a popular dish in Indonesia and Malaysia, known for its crispy crust and tender meat.

The chicken is marinated in a mixture of spices and herbs, including garlic, ginger, turmeric, and other spices. The marinated chicken is then deep-fried until crispy and golden brown.

Ayam Goreng literally translates as “fried chicken”! Or rather “versions” – these nations are so crazy about fried chicken that there is not just one, but at least a dozen different ways to prepare it! Some are breaded, some are dusted with flour, others are simply marinated and fried without breading. Some are served with spicy sambal, others with tempting sauces, and still others are served plain so that their crispy glory can be fully appreciated.

Ingredients

  • 1 chicken, cut into pieces

  • 3 Shallots

  • 4 Garlic cloves

  • 3 cm fresh Turmeric

  • 4 cm Ginger

  • 1.5 tsp Salt

  • Pfeffer

  • 200 ml Water

  • 2 Bay Leaves

  • 2 Lemongrass, pressed

  • 4 Kafir Lime Leaves

  • Oil for frying

Instructions

Step 1

Crush the shallots, garlic, ginger, and turmeric in a blender.

Heat some oil in a pot and add the chicken pieces. Pour in the water. Add the crushed spices, plus salt, pepper, bay leaves, kaffir lime leaves, and lemongrass, and mix well.

Cover the pot and bring to a boil, then reduce the heat and simmer for 15 minutes.

Then turn the chicken pieces and simmer for another 10 minutes.

Remove the pieces from the liquid, place them in a sieve and drain.

Heat oil in a heavy pan and fry the drained pieces of meat until brown. It’s up to you how brown you want them.

Notes

Coat the chicken pieces in rice flour before frying to make them crispier.
