Chicken Schnitzel from the Grill

We served up chicken schnitzel from the grill! I’m a big fan of chicken!
I avoid red meat as I find it difficult to digest. But chicken is not the easiest meat to grill! As it is often of different thicknesses, or even has bones in it, it is often either underdone or overdone.
That’s why I cut it into cutlets, so that the meat is the same thickness everywhere and can be grilled very well. But you also need a good marinade and mine is quite spicy!

Ingredients
4 Chicken Breasts, each cut into 2 Schnitzel
2 tbsp brown Sugar
3 tbsp Soy Sauce
½ Bund Parsley chopped
1 tbsp Thyme
1 tbsp Lemon Zest
4 Garlic cloves, chopped
½ tsp Salt
½ tsp Pepper
1 tsp Paprika
1 ½ tsp Chili
Marinade

Step 1
Mix the marinade ingredients together. Place the Schnitzel into a container, add the marinade, seal and shake well. Leave to marinate for 2 hours.

Grill the Schnitzel on the barbecue on both sides. Make sure they are not in the flames!
