Son cooks again, you could call this entry. Yes, I was spoiled when I was in Europe! Micky’s baked chicken wraps are easy and quick to cook. Because anything that takes a long time is shunned by my son, I can cook that, he says.
My son has already posted a simple potato recipe here on my blog. And of course, a simple and quick wrap recipe, his specialty. And his best Tiramisu ever!

Since my son is a “cheese monster”, (there is no such thing as too much cheese, are his words!) he added lots and lots of cheese and then baked the wraps. So they are great for prepping and then when you get home from work, just pop them in the oven!

Ingredients

For 3 Wraps

  • 3 wholewheat Wraps/Tortillas

  • 350 g Chicken Breast diced

  • 1 Bag Mexicans Fajita Seasoning dissolved in 100 ml Water

  • Paprika

  • Chili flakes

  • Pepper

  • Oregano

  • 1 red Capsicum, cut into stripes

  • 1 handful grated Carrots

  • 1/2 Bunch Chives, chopped

  • grated Cheese to taste

  • 2 tbsp Olive Oil

Step 1

Fry the chicken cubes well in hot oil, add the Mexican spices mixed in water and season with paprika, pepper, oregano and chili flakes, it may be a little spicy!

Add the grated carrots and the capsicum cut into strips and let everything cook until the liquid is reduced.

Lay out the wraps on plates and sprinkle with some grated cheese. Then spread the meat on the 3 wraps, if you like you can add some more cheese on top like my “cheese monster”.

Roll up the wraps and place them seam side down in a greased gratin dish.

Sprinkle some grated cheese on top and bake in the oven at 180 C degrees for about 20-30 minutes.

Notes

The wraps are traditionally served with sour cream, Guacamole and lettuce leaves. Instead of chicken breasts, you can also use beef strips!
