
Chicken Schnitzel with Cauliflower mashed Potatoes

This chicken schnitzel with cauliflower mashed potatoes is very easy to make. Using this method, the cutlet turns out tender and juicy.
Chicken is high in protein; 100 g contains 31 g of protein. By comparison, turkey has 29 g, lean beef 26 g, regular beef 17 g, pork 27 g, lamb 25 g, salmon 20 g, tuna 23 g, and shrimp 24 g.
But that’s not the only reason I like to cook chicken—I simply love how tender and juicy it is.
This time, I pounded the chicken breasts flat and then dipped them in seasoned egg before breading them. They turned out melt-in-your-mouth tender and really juicy with a crispy crust—just the way you love your schnitzel!

Ingredients
2 Chicken breasts
2 Eier
2 Handful Breadcrumbs
Salt and Pepper
Chili
Paprika
Rosemary
1 tbsp Olive Oil
30 g Butter
2 Garlic cloves, chopped
1 tsp dried Thyme
2 big waxy Potatoes
1 small Cauliflower separated into florets
100 ml Milk
20 g Butter
Salt and Pepper
1 Pinch of Nutmeg
Cauliflower mashed Potatoes in the TM6:
Instructions

Step 1
Do not cut all the way through the center of the chicken breasts; open them up and flatten them between sheets of plastic wrap.

Beat 2 eggs with salt, pepper, paprika, chili, and rosemary. Place the chicken breasts in the mixture.

Meanwhile, add the olive oil and butter to a shallow pan, then add the minced garlic and thyme. (Do not heat yet!)

Now pour 400 ml of water into the TM6 bowl, insert the cooking basket, and add the peeled and diced potatoes.

Place the lid on without the measuring cup and set the Varoma on top. Add the cauliflower florets and cover the Varoma. Now cook for 20 minutes/Varoma/Speed 1.

After 10 minutes, start frying the meat. Heat the prepared pan. Once the butter has melted, coat the cutlets well in the breadcrumbs and add them to the hot pan. Fry until golden brown on both sides.

Meanwhile, place the steamed potatoes and cauliflower florets in the emptied TM6, add the spices, butter, and milk, and purée for 20 seconds/speed 4.

Serve the purée with the schnitzel and lemon slices.
