
Watermelon Cocktail

This watermelon cocktail is very refreshing and a MUST-TRY in the summer! It’s topped off with Prosecco! So fresh and bubbly!
Originally, watermelons were grown and stored because of their high water content to be eaten during dry seasons, not only as a food source but also as a method of water storage. Watermelon seeds have been found in the Dead Sea region at the ancient settlements of Bab edh-Dhra and Tel Arad. Many 5,000-year-old wild watermelon seeds were discovered at the prehistoric archaeological site of Uan Muhuggiag in southwestern Libya. This archaeobotanical discovery could support the possibility that the plant was more widespread in the past than it is today.
Watermelons were cultivated in India in the 7th century and had reached China by the 10th century. The Moors introduced the fruit to the Iberian Peninsula, and there is evidence that it was cultivated in Córdoba in 961 and also in Seville in 1158. It spread northward through southern Europe, its advance possibly limited by insufficient summer temperatures for good yields. The fruit appeared in European herbals from 1600 onward and was widely cultivated in Europe during the 17th century as a minor garden crop.

Ingredients
¼ watermelon, juiced (about 250 ml)
50 ml light Rum
Juice of ½ lemon
1 Bottle Prosecco
Lemon slices or watermelon slices for garnish
Instructions

Step 1
Mix the watermelon juice with the lemon juice and rum, then pour the mixture into 4 glasses.

Step 2
Add ice cubes and top off with Prosecco.

Step 3
Garnish with lemon slices or a bit of watermelon, then serve.
