
Potato Patties with whipped Egg Whites

I love potato cakes, and these potato cakes made with beaten egg whites turn out lovely and light and delicious.
You can do so much with leftover mashed potatoes – from patties to croquettes or gratins, anything goes. What’s more, you can mix potatoes with just about anything; they really go well with any meat, fish or vegetable. That’s why I love them so much!

Ingredients
Ca. 150-200 g leftover mashed Potatoes
1 red Bell Pepper, chopped
3 Spring Onion, chopped
4-5 Mushrooms, chopped
2 Egg yolks
2 Egg whites
20 ml Milk
Flour until the dough thickens slightly
Salt and Pepper
Paprika
Chili
Nutmeg
Instructions

Step 1
Mix the mashed potatoes with the egg yolks and milk, and season well.

Mix in all the vegetables and add enough flour to thicken the mixture slightly.

Beat the egg whites with a pinch of salt until stiff, then gently fold them into the mixture.

Step 4
Fry in small batches in hot oil, then sprinkle with sea salt and serve.
