
Homemade Bratwurst with Eggplant and French Fries

I still had some homemade bratwurst in the freezer that needed to be cooked. So we had homemade Bratwurst with Eggplants and French Fries.
I don’t often make fries myself because I don’t have a deep fryer. We also rarely eat fried food, and when we do feel like it, we order it at a restaurant.
But this time, shortly before leaving for Europe, I still had oil left over from a previous frying session and needed to use up some potatoes. That’s why I made this combination of dishes.

Ingredients
10 small homemade Franconian Bratwurst sausages
3 large Potatoes, cut into thin sticks
1 large Eggplant, cut into small cubes
Oil for frying
2 large onions, sliced
2 Beef Tomatoes, diced
3 Garlic cloves, chopped
2 tbsp Cornstarch
Salt and Pepper
Paprika
Chili
½ tsp Sugar
100 ml White Wine
1 Beef Broth Cube
Water
some Cream
Instructions

Step 1
Fry the sausages well on both sides in a hot flat pan.

Step 2
Heat a little oil in another flat pan and add the onions and garlic. Sprinkle with sugar and add the tomatoes, then the sausages. Season well.

Cook until the onions are soft, then pour in the wine. Add the bouillon cube and mix well. Add a little water if necessary. Reduce and add a little cream if desired.

Place the potato sticks in cold water immediately after cutting! Dry them with a kitchen towel before frying. Then fry them in hot oil. Drain on kitchen paper.

Coat the eggplant cubes in cornstarch. Then fry them in hot oil. Drain on kitchen paper. Serve everything together.
