
Carrot and Shrimp Patties

Rüebli und Crevette Chüechli is the Swiss German word for simple carrot and prawn patties!
I love these little patties, for me they are a whole meal in themselves. I already have lots of these Patties on my blog, with vegetables, fish, meat, vegetarian or Asian, you name it.
The advantage of such patties is that you can easily get rid of any leftovers from the fridge, which is why they are a popular meal before a trip or vacation.

Ingredients
150 g medium size Shrimps
3-4 Carrots
2 Spring onion, chopped
½ Bunch Coriander, chopped
Salt and Pepper
some Chili
2 Eggs
30 g grated Cheese, Gruyère
Instructions

Step 1
Julienne or finely grate the carrots, then mix well with the parsley, spring onions, eggs, cheese, prawns and spices. Leave to stand for 10 minutes to soften the carrot strips and make the pancakes easier to shape.

Step 2
Heat a little oil in a shallow pan, shape a handful of the mixture into a patty, wrapping the carrot strips around the prawns. Fry them in the hot oil until brown on both sides.

Step 3
Serve the patty with Mayonnaise-Sriracha Dip or a Sour Cream Dip.
