
Stuffed Lotus Root Cake

Lotus root is something fine, it is very well known in Asia. I have made stuffed lotus root cakes! I mixed minced pork with spices and herbs, packed into slices of lotus and then fried them, breaded with sesame seeds.
I often use lotus for Chips, they turn out better than potato chips, at least that’s what I think! But you can also stuff them and then fry them, which also tastes very good.
Lotus root has a few health benefits: it promotes blood circulation, lowers blood pressure, loosens mucus and reduces fever.

Ingredients
24 slices of Lotus Root approx. 3 mm thick (mine were thinner, so I put 2 slices on each side)
Sesame Seeds
Oil for frying
300 g minced Pork
3 cloves garlic, chopped
1 tbsp chopped Ginger
¼ bunch Parsley, chopped
1 green Chili, chopped
1 tsp Sesame Oil
2 Spring onions, chopped
Salt and Pepper

Step 1
For the filling, knead all the ingredients together well.

Step 2
Place 1 slice of lotus (or 2) on a work surface and press a portion of the filling onto it. Cover with a lotus slice (or 2) and press together lightly.

Turn these lotus cakes in sesame seeds, then fry in hot oil. Serve hot.
