
Cheesecake with Berries (no bottom)

This quark cake with berries is gluten-free because it has no base. It works really well and tastes very light. I filled it with berries and decorated it.
Quark is hard to find in Asia, but if you search, you can find a lot these days and even have it delivered to your home. That’s what I did, I found a manufacturer that makes curd in the Philippines. I immediately ordered a few pots, because quark is easy to freeze. So, you always have it to hand!
Of course, you can also make curd cheese yourself, but it’s so much easier for me this way, and the supplier also has other interesting products!

Ingredients
20 cm Diameter:
400 g Quark
440 g Cream cheese
100 g Sugar
40 g Cornstarch
1 tbsp Lemon Zest
1 Pinch of Salt
1 tsp Vanilla paste
1 Lemon, the Juice
100 ml Milk
5 Eggs
500 g mixed frozen berries
5 tbsp Water
4 tsp Cornstarch

Instructions

Step 1
For the filling, place the defrosted berries in a pan and bring to the boil. Allow to reduce slightly, then mix the water with the cornstarch and add. Allow to thicken. Set aside and leave to cool.

For the cake, mix the quark and cream cheese together. Add the sugar, cornstarch, lemon zest, salt and vanilla paste and mix well.

Add the lemon juice and finally the milk. Then add each egg separately.

Line a cake tin with baking paper and pour 1/3 of the quark mixture into it.

Spread the cooled berries on top and cover with the rest of the quark mixture.

Bake in the oven at 180 C degrees for 1 hour. Turn off the oven, leave the oven door slightly open with a wooden spoon and leave the cake to cool.

Then leave the quark cake to cool in the fridge overnight. The next day, decorate with fresh berries.
