Kilawin – Filipino Pork Belly Salad

In the Philippines, there is Kilawin – Filipino pork belly salad, which is served as an appetizer.

Kilawin or kilawen is a Filipino dish of chopped or sliced meat, poultry, seafood or vegetables that is typically eaten as an appetizer before a meal or as finger food with alcoholic beverages.

Kilawin is commonly associated with the Ilocano dish “kilawen a kalding” (Tagalog: kilawing kambing), a lightly grilled goat meat traditionally eaten with papaít, a bitter substance usually derived from bile or mucus from the animal’s internal organs.

For Ilocanos, however, “kilawen” is an intransitive verb for food preparation that encompasses all raw and lightly cooked or cured foods, including dishes known as kinilaw. Non-Ilocano Filipinos, on the other hand, often refer only to meat cooked similarly to adobo or paksiw.

Ingredients

  • 2 slices of pork belly, each approx. 1 cm thick, approx. 600 g together, with rind

  • 1 tsp Peppercorns

  • ½ tsp Salt

  • Cardamom

  • ½ tsp Chili Flakes

  • 1 rote Onion, chopped

  • 3 cm Ginger, chopped

  • 3 Garlic cloves, chopped

  • 1 Beef Tomato, chopped

  • 1 green Chili, chopped

  • 1 Cucumber

  • 1 Spring onion, chopped

  • Dressing

  • Juice of 4 Limes

  • 2 tbsp Cider Vinegar or more

  • 1 tsp brown Sugar

  • Salt and Pepper

  • Chili

  • 4 tbsp Olive Oil

  • some Soy Sauce to taste

  • In the Philippines they also add Maggi Liquid seasoning

Instructions

Step 1

Simmer the pork belly slices in water seasoned with salt, peppercorns, cardamom and chili flakes for approx. 1 hour. The meat should be completely soft. Drain and leave to cool.

Meanwhile, cut the tomato and cucumber into small pieces, removing the inner seeds from the cucumber first.

Mix the vegetables with garlic, ginger and onion.

Mix the dressing together, it should be tangy.

Finely chop the pork belly, the pieces should be no longer than 2cm/1cm/5 mm.

Step 6

Mix the meat with the vegetables and add the dressing. Cover and leave to marinate for 3 hours. Serve cold.
