Marisa’s gluten-free Vegetable-Feta Patties

My sister is cooking! She has cooked a huge amount of Marisa’s gluten-free vegetable and feta dumplings. She’s cooking for her daughter and family now and it’s all about healthy, low-carb food. She has achieved just that with these patties. As you don’t need any flour to bind them, they are also gluten-free!
I think with a little imagination you can also make them with zucchinis or beetroot. Once again, you can be very creative!

Ingredients
400 g Potatoes
600 g Carrots
400 g Feta Cheese
Salt and Pepper
Italian Herbs
5 Eggs
200 g ground Almonds
Instructions

Step 1
Coarsely grate the vegetables and feta. Squeeze the juice out of the vegetables.

Mix the vegetables and feta together and season well with salt, pepper and Italian herbs.

Beat the eggs in a separate bowl and season. Now add these to the vegetable mixture with the almonds and mix everything well.

Step 4
Shape into patties and place on a baking tray lined with baking paper. Bake in the oven at 200 C degrees for approx. 45-60 minutes.
