Frittata with Vegetables and Sausages

Frittata is a good example of using up leftovers. This frittata with vegetables and sausages is one such example.
When we make raclette, we always serve up sausages and vegetables, which we then grill on the griddle. But there are usually 1-2 sausages, and some vegetables left over and you don’t know what to do with them because they don’t make a dish. That’s why we usually end up with a frittata or a wrap with all the leftovers inside.

Ingredients
1 Handful Okra
2 Tomatoes
1 large Eggplant
2 Nürnberger Sausages
1 Cervelat Sausage
1 Onion
3 Garlic cloves, chopped
8 Eggs
Salt and Pepper
Paprika
Chili Powder
2 tbsp Olive Oil
Instructions

Step 1
Cut all the vegetables and the sausages into small cubes.

Fry the vegetables with the sausages in a shallow pan and season well. Put to one side and leave to cool briefly.

Beat the eggs in a bowl and season, then mix in the cooked vegetables and meat.

Grease a gratin dish and pour in the mixture. Bake in the oven at 180 C degrees for 30-40 minutes.
Notes
