Cheesy Sweet Potato Patties

Cheesy sweet potato patties are crispy on the outside and soft and velvety on the inside, a MUST for sweet potato lovers.

My son loves them very much, my husband not quite so much, but he went for these patties! He suddenly started loving the sweet potato!

You must season them really well, otherwise they become bland. I added quite a lot of chilies and they can take it. As they are baked in the oven, they don’t fall apart either!

Ingredients

  • 5 Sweet Potatoes

  • 80 g grated Parmesan

  • 40 g grated Gruyère

  • Salt and Pepper

  • 1 tsp Paprika

  • 1 tsp Chili Powder

  • some Chili Flakes to taste

  • 200-250 g Breadcrumbs

  • Olive Oil

Step 1

Prick the sweet potatoes several times with a skewer and place on a baking tray. Roast in the oven at 200 C degrees for approx. 45-55 minutes. Leave to cool.

Peel and puree the sweet potatoes, I did this in a food processor.

Now mix the mixture with the cheese, spices and 4 tablespoons of breadcrumbs. Either leave to cool in the fridge for 1 hour or put it in the freezer for 20 minutes.

Pour the breadcrumbs into a wide plate and season with salt and pepper. Shape 2 tablespoons of the mixture into a square (or roll) in your hands and coat with the breadcrumbs. If the mixture is too sticky, you can add a little more breadcrumb.

Place the patties on a baking tray lined with baking paper and brush with olive oil. Bake in the oven at 200 C degrees for approx. 30 minutes. Serve hot.
