Poached Eggs on Blinis and smoked Salmon – Breakfast for the spoiled!

I love having breakfast, but then I skip lunch because I’m so full that I don’t need anything else. That’s why I had this dish of poached egg on blinis and smoked salmon!
This breakfast is just right for the holidays or for a loved one’s birthday. It looks “classy” and doesn’t take much work at all. You can bake these quick blinis well in advance and keep them in the fridge or freezer, then all you have to do is poach the eggs and reheat the blinis and you have a lovely, indulgent breakfast.
I cooked the blinis the day before and kept them in the fridge. By the way, these are not original blinis, because the real Russian blinis are made with yeast, but the taste is very good.

Ingredients
100 g smoked Salmon
2 Eggs
some Sour Cream
Chives
Salt and Pepper
1 Portion Blinis from this recipe

Step 1
The blinis can be made in the desired size. I made them about 10 cm in size!

Cook the poached Eggs from this recipe.

Reheat the blinis in the oven for 5 minutes at 180C degrees and place 3 of them on each plate.

Place the smoked salmon on top, add a little sour cream and sprinkle with chopped chives. Place the poached eggs on top, sprinkle with a little salt and pepper if desired and serve.
