Crispy Chicken Liver on Salad

Here in the Philippines you can get wonderful fresh chicken liver, it feels like it’s almost still warm. So, I had to buy them! I made these crispy chicken liver on a salad.
I just marinated them, pulled them through flour and fried them, very simple. Served as a salad topping or even as finger-food they are delicious!

Be careful when buying chicken liver, it has to be really fresh! Best buy it at a butcher you can trust!

Ingredients

  • 200 g Chicken Liver, cleaned and cut into bite-size pieces

  • 3 tbsp Flour

  • 2 tbsp Olive Oil

  • Marinade

  • 4 tbsp Soy sauce

  • 1 Spritzer Worcestershire Sauce

  • 2 tbsp Cider Vinegar

  • Fresh Pepper

Instructions

Step 1

Mix the marinade and put the cleaned chicken liver into it. Let it marinate for 20 minutes. Then drain.

Now pull the chicken liver pieces through the flour.

Heat the oil in a flat pan and fry the chicken liver on both sides until crisp. Let them drip off on a kitchen paper.

Step 4

Meanwhile prepare a mixed salad to your taste and mix with the dressing. Put the liver pieces on top or serve them on a plate with toothpicks as finger-food.
