Quick Breakfast with Eggs

Once again, I’m bringing you a quick breakfast with eggs, it’s carbohydrate-free and has protein in it. It’s really quick to make, with ingredients that you usually have at home!

If you want, you can easily include spinach, bacon, ham, and/or other vegetables etc.

Ingredients

  • 1 can Pelati/Tomatoes (400 g)

  • 4 Eggs

  • 1 Mozzarella

  • 1-2 Tomatoes

  • Basil Leaves

  • Salt and Pepper

Instructions

Step 1

Chop the pelati and place in a small round ovenproof dish. Cut the tomatoes into slices and place on top.

Step 2

Tear the mozzarella and place on top. Season and sprinkle with basil leaves.

Step 3

Now place the eggs on top and bake in the oven at 200 C degrees for 10-15 minutes, or as long as you like the eggs.
