Pollo a la Brasa con Aji verde-Sauce

Pollo a la brasa is a Peruvian dish of roasted chicken, usually served with aji verde sauce. It is a relatively recent invention, dating back to the 1940s when a Swiss immigrant to Peru named Roger Schuler started raising chickens in Santa Clara and, in an effort to make extra money, decided to roast some of his chickens and sell them at a low price, on an all-you-can-eat basis. He eventually opened a restaurant on his farm.

Mr. Schuler’s first chef started by roasting the chicken over charcoal on a spit and turning it by hand for an hour. This is of course very labor-intensive and you can’t make many at once. An acquaintance designed and built the first pollo a la brasa oven for roasting chicken to measure.

This recipe is based on the recipe from NerdsWithKnifes and is part of Volkermampft’s Culinary World travelwhich is traveling to Peru during January.

Ingredients

  • 8-10 Chicken drumsticks

  • Marinade

  • 40 ml Soy Sauce

  • 1 tbsp Worcestershire Sauce (for gluten-free omit it)

  • 2 Lime, Juice and Zest

  • 3 tbsp Mustard

  • 2 tbsp Honey

  • 1 tsp Cumin Powder

  • 2 tsp Paprika

  • 1 tsp Salt

  • 2 tbsp Oil

  • 8 Garlic cloves

  • Aji verde-Sauce

  • 1 Bunch Parsley (or Coriander)

  • 1 red Chili, Seeds removed

  • 2 Garlic cloves

  • 1 Schalotte

  • 1 Lime, the Juice

  • ½ tsp Salt

  • 1 tbsp Mustard

  • 1 tbsp Honey

  • ½ tsp Cumin Powder

  • 50 g Mayonnaise

Step 1

Puree the ingredients for the marinade and marinate the chicken pieces in it overnight. (It can be marinated for up to 24)

Preheat the oven to 200 C degrees. Place a drip tray under the oven rack and place the chicken pieces on the rack. Spread the remaining marinade over them. Roast in the oven for 40-60 minutes, turning occasionally.

Meanwhile, make the sauce. Puree all the ingredients in a blender.

Serve the chicken with the green sauce and some Lime wedges. Serve with rice!

Use the sauce with BBQ meats!!
