Fritto Misto – Batter with Mineral Water

Battered and fried food is popular with us, as mine drop everything right away and are already sitting at the table before I’m done!

This time I made a dough with mineral water, because it becomes much lighter and airier. It is very suitable for various vegetables, but also for fish and Cervelat Chüechli, (my husband, typical Swiss, loves those!) Chicken strips and zucchini flowers.

Ingredients

  • 200 g Flour

  • 1 Pinch of Baking Powder

  • 300 ml Mineral Water

  • 4 Egg yolks

  • 4 Egg whites

  • 1 Pinch of Salt

Instructions

Step 1

Beat the flour, baking powder together, add the egg yolks. Then add the mineral water and mix.

Step 2

Beat the egg whites with a pinch of salt until stiff and carefully fold into the dough.

Step 3

Wash and prepare the vegetables (you can use cauliflower, broccoli, peppers, eggplant, zucchini, beans, potato slices, mushrooms, zucchini flowers, etc.), possibly pre-cook them. Cut fish fillets into pieces, peel and slice sausages.

Step 4

Pull the vegetables or the pieces of fish or sausage through the dough and fry in hot oil. I divide the dough, one portion is for vegetables, one for fish and one for sausage. Serve immediately.
