Schweinebauch mit Karotten – Pork Belly with Carrots

2 Mins read

I love pork belly! The meat is similar to bacon, of course fatty, but with a lot of taste if cooked properly. I already have one of my favorite pork belly recipes here on my blog, the Chinese sticky Pork Belly. This new recipe is not sticky, but very tasty. I cooked it with carrots, as the naturel sweetness of them fit very well to the meat. Serve it with some rice or crusty bread.

Für 2 Personen:
1 TL Kreuzkümmelsamen
1 TL Pfefferkörner (ich hatte Rosenpfeffer)
2 Knoblauchzehen
1 Frühlingszwiebel, in Stücke geschnitten
2 cm Ingwer, in Scheiben geschnitten
300 g Bauchspeck, in mehrere Stücke geschnitten
400 g Karotten, in Stuecke geschnitten
Salz und Pfeffer
20 g Butter
½ TL Zucker

For 2 Persons:
1 tsp Cumin Seeds
1 tsp Peppercorns (I used rose pepper)
2 cloves of Garlic
1 Spring-onion, cut into pieces
2 cm Ginger, sliced
300 g Pork Belly, cut into pieces
400 g Carrots, cut into pieces
Salt and Pepper
20 g Butter
½ tsp Sugar
3 tbsp Soy Sauce

Bring a pot of water with the peppercorns, ginger, salt, garlic cloves, cumin seeds and spring-onion to a boil. As soon as the water boils add the meat pieces. Simmer for at least 40-50 minutes. Then drain the meat with the spices. Throw the ginger. You can remove the rest of the spices too, or you can leave them, it’s up to you. Melt the butter in a pot and add the carrots. Season with salt and pepper and add the sugar. Let glace shortly, then add the meat pieces. Let cook until the carrots are soft (approx. 15 minutes. Add the soy sauce and let reduce. Serve with rice or crispy bread.
