Sole Fillet Rolls with Spinach and Palak Patta Chaat

Sole fillet rolls with spinach and Palak Patta Chaat is a dish that bridges two worlds. The fish is cooked European-style, while the Palak Patta Chaat is prepared Indian-style!

The spinach filling inside the fish tastes wonderful when seasoned well. I also used quite a bit of garlic, because it goes really well with it!

To add some crunch to the dish, I served it with Palak Patta Chaat—it’s very simple to make; you just use the large spinach leaves.

INgredients

  • 4 large Sole Fillets

  • 500 g Spinach, set aside the large leaves for the Palak Patta Chaat

  • 6 Garlic cloves, sliced

  • Salt and Pepper

  • Chili

  • Paprika

  • Dill

  • 1 red Onion chopped

  • 20 g Butter

  • 2 tbsp Flour

  • 150 ml Milk

  • 1 Pinch of Safron

  • 100 ml Sour Cream

  • Palak Patta Chaat

Instructions

Step 1

Wash the fish fillets and pat them dry.

Heat a little oil in a shallow skillet and add the garlic cloves. Stir in the spinach and season well. Cook until the spinach has wilted and all the water has evaporated. Set aside.

Meanwhile, prepare the batter for the Palak Patta Chaat.

Squeeze out some of the excess liquid from the spinach and spread it over the fish fillets. Roll them up and place them in a greased baking dish.

Heat a little oil in a skillet and cook the onion until soft.

Add the butter and melt it over low heat, then add the flour and mix well until it forms clumps. Immediately add the milk and mix well with a whisk. Season well and add the saffron.

As soon as the sauce thickens, add the sour cream. Pour this over the fish rolls and bake in the oven at 180°C for 30 minutes.

Meanwhile, thoroughly dry the spinach leaves that were set aside, coat them in batter, and then deep-fry them. Serve everything together.

Notes

If you’d like, you can serve white rice on the side.
