Gluten-free Pear-Marzipan Cake

A gluten-free pear-marzipan cake looks great on any table. Delicate pears combined with marzipan—what a treat! Pears go wonderfully with the almond paste, and all of that on a crispy butter crust makes this cake the perfect dessert.

When it comes to baked goods, I can’t get enough of that marzipan flavor! The marzipan flavor simply pairs perfectly with fluffy, crispy, and doughy treats. With a touch of marzipan, any cake becomes the highlight of any coffee table spread!

Ingredients

Dough

  • 160 g Gluten-free Flour

  • 30 g brown Sugar

  • 115 g cold Butter diced

  • 1 Egg yolk

  • 3-4 tbsp ice-cold Water

  • Marzipan Filling

  • 115 g soft Butter

  • 85 g brown Sugar

  • 100 g Almond Flour

  • 2 Eggs

  • 1 tsp Vanilla Extract

  • Topping

  • 3 Pears

  • 2 tbsp Honey

Instructions

Step 1

In a food processor, mix the flour, sugar, and cold butter until the mixture resembles crumbs.

Add the egg yolk and just enough water to form a dough. Wrap in plastic wrap and let rest for 30 minutes.

Then roll out the dough in a cake pan (about 24 cm in diameter) lined with parchment paper and pull the edges up. Prick the bottom several times with a fork. Chill for another 15 minutes.

Now bake in the oven at 180°C (top and bottom heat) for 15–20 minutes. Then let it cool.

In a bowl for the marzipan mixture, beat the softened butter with the sugar until fluffy.

Mix in the almond flour, then add one egg at a time along with the vanilla extract and mix well.

Pour this mixture onto the cooled dough and spread it evenly.

Peel the pears and cut them into quarters. Remove the cores and cut the quarters into thin slices. Press these slices into the marzipan mixture.

Bake the cake in the oven at 180°C for 35–40 minutes. Let it cool, then drizzle with honey.

Notes
