Ground Meat Skewers with Tortillas

Ground meat skewers with tortillas are all the rage this summer. I’ve already made my version twice, and the skewers were a huge hit with my guests!

Skewers are great for the grill, but you have to make sure the pieces of meat or vegetables are the same size and have the same cooking time. It often happens to me that a vegetable isn’t cooked through, falls off, or the skewer is hard to turn.

With this skewer, it’s different—and much easier on the grill. Making the skewers isn’t rocket science either, or you can change the filling however you like. That way, you get your perfect skewer!

Ingredients

  • 1kg ground Beef

  • 2 Eggs

  • Thyme

  • Parsley

  • Salt and Pepper

  • Chili

  • Paprika

  • 3 Garlic cloves, chopped

  • 1 yellow Bell Pepper, diced

  • 8 Slices of Bacon, chopped

  • 6 Wheat Tortillas (or gluten-free)

  • Oil

Instructions

Step 1

Knead the ground meat well with the eggs, herbs, spices, garlic, bacon, and bell pepper.

Step 2

Place 1 tortilla on the work surface and spread 1/5 of the meat filling over it, almost all the way to the edges. Place 1 slice of tortilla on top and press down firmly. Repeat until all the meat is used up. The top layer should be a tortilla.

Now cut the meat cake in half horizontally; this will give you two semicircles, which you should place on top of each other, as shown in the picture.

I have metal skewers; they’re a little better than the wooden ones. I inserted the skewers at the front, about 1 cm from the cut edge and about 2.5 cm apart. Then, for the second row, I inserted skewers again about 2.5 cm behind the first row, and there’s also a third row—so in my case, I ended up with 6 skewers in the front row, 4 in the middle row, and 2 in the back row.

Now cut these cakes lengthwise into 3 slices between the skewers. Cut these slices into square pieces. In one of the pictures, you can see the first row; there you can also see the sides where the tortillas are rounded—you can cut those parts off.

Now spray or brush the pieces with a little oil and grill them on all sides on the hot grill.
