Glutenfree Samosa

I made gluten-free samosa and made my friends with celiac disease very happy.

There are tons of pastries that you really love, but as someone with an allergy, you can’t find them gluten-free anywhere. These are often snacks wrapped in dough, just like these samosa. They include sausages in puff pastry, (take glutenfree puff pastry), or Crab Rangoon, (gf Version later), Greek Spanakopita, (gf Version later), baked Vegetables or Prawns, Flatbreads, or Chinese Dumplings and Bao Buns.

Yeah, exactly—you get hungry, go out for a drink, and can’t eat any of the snacks on offer. It’s really frustrating. So I invited my friends over and served up a variety of these pastries. The Chippa So’o. were among them. It was a great evening!

Ingredients

Dough:

  • 350 g Glutenfree Flour Mix

  • 2 tsp Xanthan Gum

  • 1 tsp Baking Powder

  • 1 tsp Salt

  • 1 Egg

  • 4 tbsp Olive Oil

  • 200-300 ml warm Water

  • Filling:

  • 200 g Potatoes, peeled and diced

  • 200 g ground Beef

  • 2 tsp Butter

  • ¼ tsp Cumin Seeds

  • ½ tsp Fennel Seeds

  • 1 tbsp Curry Powder

  • ¼ tsp Turmeric

  • 1 tsp grated Ginger

  • 1 red Onion chopped

  • 4 Garlic cloves, grated

  • 80 g frozen Peas

  • 50 g grated Carrots

  • 1 tsp Salt

  • 1 tsp Pepper

  • chopped Parsley

  • 1 tbsp Lemon Juice

  • 2 tbsp Olive Oil

Instructions

Step 1

Boil the diced potatoes in salted water until just tender. Set aside.

Heat the olive oil and butter in a large skillet and sauté the cumin seeds, fennel seeds, curry powder, turmeric, and ginger until they crackle.

Add the garlic and onions and sauté until half-soft. Add the ground meat and cook thoroughly.

Then add the peas and carrots. Cook until tender.

Coarsely chop the cooked potato cubes and add them to the pan. Season with salt, pepper, and lemon juice. Add the parsley and cook briefly. Let cool.

For the dough, mix the flour with the xanthan gum, salt, and baking powder. Place the egg and olive oil in the center, as you would for pasta dough, and mix with a fork using circular motions. The dough will be crumbly.

Now slowly add enough water until the dough becomes smooth and pliable. Shape it into a roll, wrap it in plastic wrap, and let it rest for at least 40 minutes.

Now cut the roll into 8 slices. Roll out each slice into a circle, about 15 cm in diameter. Cut each circle in half through the center.

Now lift each half and lightly brush the cut edges with water, then press them together to form a pouch. (see picture)

Now spoon 2 tablespoons of the filling inside, brush the top edges with a little water, and press them together. Since the dough is gluten-free, it isn’t quite as elastic and breaks easily, but that’s okay.

Place the samosas on a baking sheet. Bake in the oven at 180°C for about 40 minutes.

Notes

Samosas are served with chutney or tamarind sauce.
You can also deep-fry samosas.
