
Asparagus and Pea Salad with a Peach Dressing

It’s still asparagus season in Europe, so I made an asparagus and pea salad with a peach dressing. This salad also works with green asparagus, so you can also make it in Asia.
The peach dressing is very simple and very fruity. It goes well with many summer salads, such as melon salads or even tomato and mozzarella salads. I like these fruity notes in sauces and dressings; they are so refreshing!

Ingredients
500 g Asparagus
1 tsp Salt
1 tsp Sugar
20 g Butter
200 g frozen Peas
1 Handful Sprouts
1 ripe Peach
1 tbsp Honey
1 tbsp Mustard
20 ml Balsamico Vinegar
50 ml Olive Oil
Salt and Pepper
Fresh Thyme
some Chili
Dressing:
Instructions

Step 1
Peel the asparagus and cut off the ends. Then cut the asparagus in half.

Cook them in boiling water with the salt and sugar for approx. 8-10 minutes until al dente. Drain and leave to cool.

Defrost the peas.

Place the ingredients for the dressing in a blender and puree.

Step 5
Mix the salad ingredients with the dressing and top with a handful of sprouts, serve immediately.
