Onion and Carrot Bhaji

Pane-Bistecca
A bhaji or bajji is a type of patty that originated on the Indian subcontinent. They are made from vegetables, usually onions, and are available in different varieties. My version is an onion and carrot bhaji! My variation is again not original, however it is gluten-free, as it is hard here in the Philippines to find special ingredients.

They are a popular snack in India and also in Pakistan. It is sold at street stalls. It is also a common starter or side dish in Anglo-Indian cuisine in the UK. That’s where I got to know them when we lived in London in the 80s.

Ingredients

  • 2 large onions, halved and thinly sliced

  • 1 large carrot, julienne cut

  • 100 g Rice Flour (originally Chickpea)

  • ½ tsp Baking Powder

  • 1 tsp Salt

  • 1 tsp Turmeric

  • ½ tsp Cumin

  • 1 green Chili chopped

  • 1 tbsp Cilantro Leaves chopped

  • 1 tbsp Lemon Juice

  • some Water

  • Oil for frying

Instructions

Step 1

Mix the flour with the spices, lemon juice and coriander, then add enough water to make a thick batter.

Add the onions, carrot and chili and knead together so that everything is mixed into the batter.

Heat the oil in a heavy pan and using 2 spoons, form small mounds of the mixture and place them in the hot oil. Fry until the vegetables are crispy.

Step 4

Transfer to a plate and drizzle with lime juice (if desired) and serve with raita or garlic mayonnaise.
