Adrio with Onion-Mushroom Sauce

Adrio with onion-Mushroom sauce is very Swiss! Adrio is a meatball made from a mixture similar to bratwurst, only better seasoned. The filling consists of finely ground pork or veal sausage meat or a mixture of the two. It is wrapped in a pork net and fried in this way.

Although the name adrio was originally derived from liver, today it is usually prepared without liver. Today, adrio consists of veal and pork muscle meat, pork fat, veal head or rind and pork netting. Even a so-called veal adrio always contains a high proportion of “pork parts”, mainly bacon and the typical netting. The sausage meat is seasoned with garlic, onions, salt, pepper, thyme and parsley.

Adrios can be bought ready-made from the butcher in Switzerland or prepared yourself from sausage meat.

Ingredients

  • 2 Adrios

  • 2 Onions, halved and sliced

  • 2 cloves of Garlic, chopped

  • 20 g Butter

  • ½ tsp Sugar

  • Salt and Pepper

  • 250 g mixed Mushrooms

  • Chili

  • Paprika

  • 100 ml Red Wine

  • 50 g Cream

  • 2 tsp Gravy Powder

Instructions

Step 1

Melt the butter in a wide pan and fry the onions and garlic in it. Sprinkle over the sugar and allow to glaze briefly.

Step 2

Push the onions to the outside and add the adrios. Fry the adrios well on both sides, moving the onions around to prevent them from burning.

Step 3

Chop the mushrooms and add them, season well. Deglaze with red wine, add the gravy powder and season. Allow to reduce briefly, then add the cream and mix well.

Step 4

The adrios go really well with mashed potatoes or my mashed potato soufflés!
