Crystal Dumplings – gluten-free Rice Paper Dumplings with Tofu

These Crystal Dumplings – gluten-free rice paper dumplings with tofu are very easy to make. You don’t have to make your own dough every time and then fold the dumplings beautifully and laboriously.

. Here I will show you a very simple and delicious way to make gluten-free dumplings.

Ingredients

  • 10 Springroll Rice Paper Leaves (the big ones!)

  • 1 Bunch large Thai Basil Leaves or Spinach Leaves

  • Filling:

  • 250 g firm Tofu

  • 4 Garlic cloves, finely chopped

  • ¼ Chinese Cabbage grated

  • 6 Shiitake Mushrooms chopped

  • 1 Shallot, chopped

  • 1 Carrot, grated

  • 2 tbsp Soy Sauce

  • ½ tsp Chinese 5 Spice Powder

  • Salt and Pepper

  • 1 tbsp Cornstarch

  • some Oil

Step 1

To make the filling, first wrap the tofu in kitchen paper and then weigh it down to squeeze out all the water. Leave to stand for 15 minutes, then break up roughly.

Heat the oil in a wide pan and add the tofu. Now mash and fry like minced meat. When all the remaining liquid has cooked off, mix in the salt and pepper and soy sauce.

Add the garlic and then all the vegetables. Mix well with the tofu and fry, season and sprinkle over the cornstarch. Mix again and set aside to cool. (you can make the filling the day before)

For the dumplings, coat a plate with a little oil to prevent the rice paper dumplings from sticking to it. You should also make sure that they do not touch each other!

Fill a bowl with water. Now dip 1 sheet of rice paper in it so that it is wet on both sides, take it out immediately, do not leave it to soak, and place it on the work surface. Wet a second sheet of rice paper in the same way and place it on top of the first sheet. Then cut these two rice papers, which have stuck together, into quarters.

Step 6

Each quarter will be 1 dumpling. To do this, place the quarter on the palm of your hand with the tip facing outwards (see pictures). Place 1 large basil or spinach leaf on top, pretty side down.

Place 1-2 tbsp of the filling on top and fold both sides into a triangle. Then place the tip on top and press down a little. Place on the oiled plate. (I froze the dumplings like this, so you can take them straight from the freezer and put them in the pan)

Fry the Crystal Dumplings well on both sides in a little oil and serve with the dumpling sauces.
