Haddock fillets au gratin with roasted vegetables, all baked in one pot!
I finally found a store that sells more than just sole fillets and pangasius! I found haddock, which is very firm and tastes good to me. Since it is firm, it is well suited for gratinating. That’s what I did with it.
I love simple dishes like this that you can just pop in the oven and cook everything together. So easy and time-saving!

Ingredients
4-6 Haddock Fillets
Fish Topping
150 g Cream Cheese
150 g Herb Crem Cheese
2 Spring onion, chopped
Salt and Pepper
Chili
1 Bunch Parsley, chopped
1 Eggplant, chopped
100 g Button Mushrooms
100 g Bacon, diced
some Olive Oil
Salt and Pepper
Rosemary
Vegetable
Instructions

Step 1
Wash the fish and pat dry, then place skin-side down in a greased gratin dish.

Mix the topping ingredients well and spread over the fish fillets.

Mix and season the vegetables, then mix with a little olive oil. Place next to the fish in the gratin dish and bake in the oven at 200°C for approx. 40 minutes.
