
Lemon Schnitzel

Schnitzel are always good, whether it’s Wienerschnitzel, Hunters schnitzel, Natural schnitzel, Cream schnitzel, Zigeunerschnitzel, Chicken schnitzel or like here a Lemon Schnitzel.
Schnitzel, Schnipo, Wienerschnitzel, and Rahmschnitzel are all popular dishes in Switzerland. Schnipo (a combination of schnitzel and fried potatoes) is very popular. The Rahmschnitzel variant is made from either veal or pork and served with a cream sauce, sometimes with mushrooms. The cordon bleu version of schnitzel—two schnitzels (or one schnitzel with a pocket) filled with cheese, typically Emmental or Gruyère, and a slice of ham—is also popular in Switzerland. The “Walliser Schnitzel” is another variation in which the meat is not breaded but fried in oil and then covered with tomato sauce and raclette cheese. (from Wikipedia)

Ingredients
4-6 large Pork schnitzel
Salt and Pepper
Paprika
Rosemary to taste
Flour
20 g Butter
Zest of 1 Lemon
Juice of 2 Lemons
2 Eggplants diced
2 Tomatoes, diced
3 Garlic cloves chopped
2 Spring onion chopped
Salt and Pepper
Paprika
Chili
Italian Herbs
Olive Oil

Step 1
Season the cutlets on both sides as desired and place them between two sheets of plastic wrap. Now flatten the cutlets. If you don’t have a meat tenderizer, you can also use a pan 😉

Now coat the cutlets in flour and fry them in melted butter in a large pan until brown. Sprinkle with grated lemon zest, add the lemon juice and allow to reduce slightly.

Meanwhile, for the vegetables, heat the olive oil and sauté the garlic.

Add the vegetables and season, fry everything thoroughly. Then sprinkle the spring onions on top. Serve the cutlets with the vegetables.
Notes
Pasta or classic French fries go very well with this schnitzel! Serve the schnitzel with a slice of lemon.
