Airfryer Chicken Wings with Oven Eggplant

Air fryer chicken wings with oven-baked eggplant is a very simple recipe that keeps all your pots and pans clean! It’s also ideal for single households. Chicken and vegetables always go well together.

I found these round, thick eggplants, and they taste really good when you just bake them in the oven. I fried the chicken wings in the air fryer, but if you don’t have one, you can just bake them in the oven. The marinade is important—it can be a little spicy!

Ingredients

Eggplant:

  • 1 round Eggplant

  • 1 tsp red Pesto

  • 1 tsp chopped Garlic

  • 4 tbsp Olive oil

  • 1 tsp dried, Italian Herbs

  • Chicken Wings:

  • 4 Chicken Wings

  • Paprika

  • Salt and Pepper

  • Chili

  • Rosemary

  • 4 tbsp Cornstarch or Rice Flour

  • 3 tbsp Olive Oil

Instructions

Step 1

Place the chicken wings, paprika, salt and pepper, chili, rosemary, and cornstarch in a freezer bag, pour in the olive oil, and shake the bag so that the seasoning and cornstarch stick to the wings.

Step 2

Place the wings in the air fryer and bake at 200°C for 20 minutes, turning once. If you don’t have an air fryer, place them in a greased baking dish and roast in the oven at 200°C for about 30 minutes.

Step 3

Cut the eggplant in half and place in a greased baking dish. Spread the garlic and pesto mixture on the cut side, sprinkle with Italian herbs, and drizzle with olive oil.

Step 4

Roast in the oven at 200°C for about 30 minutes.
