Beetroot Patties

I love these beetroot cakes; they’re simple and very healthy. Beetroot is a root vegetable that can be eaten raw or cooked.

The best-known variety is the deep red beetroot, but there are also white and yellow varieties. The uniform red color of the root is the result of breeding in the 19th and 20th centuries.

Beetroot is rich in vitamins, minerals and phytochemicals. It can boost blood circulation, regulate blood pressure and support athletic performance. It also contains antioxidants that have anti-inflammatory effects and can promote general health. However, you should be careful if you have kidney problems or a tendency to develop kidney stones, as the high oxalate content can be problematic.

I mixed my beetroot patties with onion, carrot and a sweet potato.

Ingredients

  • 2 Beetroots

  • 1 Sweet Potato

  • 1 Carrot

  • 1 Onion

  • Salt and Pepper

  • Paprika

  • Chili

  • 2-3 tbsp Rice Flour

Instructions

Step 1

Grate all the vegetables into thin strips and mix together.

Mix in the flour and season well.

Heat the oil in a shallow frying pan, scoop out small patties from the mixture using a tablespoon and fry well on both sides.

Step 4

Sprinkle with a little sea salt and serve.
